Reheating Instructions

For convection ovens: Reduce reheating time by 30 minutes.

Whole Brisket

Brisket comes wrapped in food-grade plastic and butcher paper. Remove the plastic only, keep it wrapped in butcher paper, and wrap in foil. Bake at 250°F for 2 hours or until the internal temperature reaches 155 degrees.

Whole Duck

Remove plastic only, keep it wrapped in butcher paper, and wrap in foil. Bake at 275°F for 1.5 hours or until the internal temperature reaches 155 degrees.

Whole Leg of Lamb

Remove plastic only, keep it wrapped in butcher paper, and wrap in foil. Bake at 275°F for 1.5–2 hours or until the internal temperature reaches 155 degrees. Remove string before serving.

Whole Turkey

Wrap turkey in butcher paper, place in roasting pan, and bake at 325°F for 2 hours or until the internal temperature reaches 150 degrees.

Whole Turkey Breast

Turkey breast comes wrapped in food-grade plastic and butcher paper. Remove the plastic only and bake at 275°F for 1–1.5 hours.
